Yep I know its like a month late but hey late is better than never right?!?! This was the Kids Easter cake :) I'm not posting anything else from Easter but this is a must. It was actually very easy and of course the kids loved it I mean with all that sugar what kid wouldn't hehe. I did just use a white boxed cake mix. I used food coloring and made one layer Pink and one Layer Blue. When it was done I made my butter cream frosting which is soo good I use it for like everything and covered the whole cake with that. I put different colored peeps all around the cake and put the Easter M&Ms all over the top.

Old Fashioned Gingerbread
This week we got a little cold front and to celebrate that little cold front I decided to make some Gingerbread. Let me tell you that was a great decision of mine if I do say so myself. I got the recipe from http://allrecipes.com/Recipe/Favorite-Old-Fashioned-Gingerbread/Detail.aspx . It was awesome. Everyone loved it. In the words of Serenity it was off the hook...yep that's my 4 yr old hehe.
Ingredients:
1/2 cup White Sugar
1/2 cup unsalted butter
1 egg
1 cup Unsulphured Molasses
1/2 cup of unsweetened apple sauce
2 1/2 cups Flour
1 tsp baking soda
2 tsp ground cinnamon
2 tsp ground ginger
1/2 tsp ground cloves
1 cup of hot water
Directions:
1. Preheat over to 350 degrees. Grease and Flour a 9 inch square pan. I used an 8 inch pan because that's all I had.
2. In a large bowl, sift together the sugar and the butter. Beat in the egg, and then mix in the molasses and the applesauce.
3.In a bowl, sift together the flour,baking soda,and spices. Blend into the creamed mixture. Stir in the hot water. Pour into the prepared pan.
4.I baked 45 minutes and it came out perfect the directions say an hr but I think that is too much so start checking at 45 minutes.

Cinnamon Roll Cake
Hey again! Since I'm like soo addicted to pinterest I decided to do two desserts yesterday and they both came out pretty good!! This one was a big hit with most of my family except my dad who doesn't eat icing hehe. He loved the other one. My kids I think liked them both equally but hmmm SUGAR!! Enough of this lets get to it. This is Cinnamon Roll Cake which I got the recipe from Chef in Training.
This is what you will need for the cake:
3 cups of Flour
1/4 tsp of Salt
1 cup of Sugar
4 Tsps Baking Powder
1 1/2 cups of Milk
2 eggs
2 Tsps of Vanilla
1/2 cups of melted Butter (1 stick)
Preheat your oven to 350 degrees. Spray a 9x13 glass baking pan with cooking spray.
Beat together your flour,salt,sugar,baking powder,milk,eggs,and vanilla.
Once combined well, slowly stir in the melted butter.
Pour into your prepared pan.
For the topping you will need:
1 cup Butter, softened (2 sticks)
1 cup Brown Sugar
2 Tbsp Flour
1 Tbsp Cinnamon
In large bowl mix butter,brown sugar,flour and cinnamon together untill well combined and creamy.
Drop evenly over the batter by the tablespoonfuls and use a knife to marble/swirl through cake.
Bake at 350 degrees for 35-40 mins I did 37 mins ;)
For the glaze you will need:
2 cups Powdered Sugar
5 Tbsp Milk
1 Tsp Vanilla
In a medium bowl, mix the powdered sugar,milk and vanilla together with a whisk.
Drizze over the warm cake. Serve warm or at room temperature.
This was really good for breakfast the next day too.
