Cookie Monster Cupcakes



Our friend Kathy is in town!! She just flew in last night and were going to see her today.YEAA Her and her husband are staying at a hotel for 4 nights then shes going to come stay with us for the weekend :) Last time she was here was during Halloween and you know what she was?? She was the cookie monster :) A crazy Cookie Monster....so I wanted to make her something for her and her husband ....something to have in the hotel to snack on so what better to make than Cookie Monster cupcakes. I was looking around on the net for a good recipe and I found a super cute and easy way to make the cookie monster on Eat Cake for Dinner http://eatcakefordinner.blogspot.com/2012/01/cookie-monster-cupcakes.html
 For the cupcakes I made Dark Chocolate Truffle Cupcakes from http://www.pamperedchef.com/recipe_search/recipe.jsp?id=97328 These were yummy but I totally forgot I had to stick a cookie in the cupcake and as you will see you also stick a truffle in the cupcake so it was a little tricky but after a few I just ended up sticking the cookies on top of the truffle part anyways and it worked out just fine :) You could make these too and just omit the truffle and they would just be very good chocolate cupcakes :) Lets get to it!!
For the cupcakes you will need:
1 cup All Purpose Flour
1 cup Sugar
1/2 cup Unsweetened Cocoa Powder
1/2 Tsp Baking Soda
1/4 Tsp Baking Powder
3/4 Cup water
1/3 Cup Vegetable Oil
1 Tsp Vanilla
1 Egg
12 Dark Chocolate Truffles

Preheat oven to 350 degrees. Place paper liners in wells of Cupcake/Muffin Pan.
In Mixing Bowl, Combine Flour, Sugar, Cocoa Powder, Baking Soda and Baking Powder, mix well. 
Add Water, oil and Vanilla. Beat at Low Speed just until combined. Beat on Medium speed for 2 minutes.

Add egg, beat for an additional 2 minutes or until well blended. 
Using Large scoop, divide batter evenly among liners. (My Real small one was supposed to be like that for my Rain) Bake 18-22 minutes or until wooden pick inserted in centers comes out clean. I cooked mine for 20 minutes!! 
Remove Pan from Oven. While cupcakes are still warm snip a 1/2 inch-deep "x" into top of each cupcakes using professional shears. ( I didn't have any I just used a knife and it worked just fine)
Press one truffle into each cupcake until flush with top of cupcake. Cool 20 minutes or until cool enough to handle. (Truffles will melt into cupcakes)

For the Decorating of The Cupcakes you will need:
1 batch of butter cream Frosting tinted Sky Blue
Famous Amos Chocolate Chip Cookies
White Candy Melts
Chocolate Chips 
Wilton #233 Decorating Tip


(sorry it got really late and I was tired and didn't even take pics of this part which was probley the part I should have haha but its super easy.)
 
First, take the cupcake and cut out a mouth for the cookie monster ( I just stuck the cookie in the cupcake where the mouth goes) Pipe the frosting with the #233 tip all over the cupcake. Melt a few white candy melts. Put a dab on the back of the chocolate chip and stick it on the flat side of a candy melt. If frosting is still soft, you can dab the "eyes" into the cupcakes. My frosting stayed soft well its still soft today hehe and this was last night so I don't think you should have a problem, but if you do put a dollop on the back of the candy melt and press the "eyes" into the cupcake. Repeat with remaining cupcakes. There you go you have your Cookie Monster :)
