2013


We have a tradition on New Years Day we always make Ham,Broccolini and Macaroni and Cheese with bread pudding for dessert. It is a very yummy meal and see we do have something healthy to start the year with (broccolini) hehe :)  The Broccolini I got from Food Network http://www.foodnetwork.com/recipes/ina-garten/broccolini-and-balsamic-vinaigrette-recipe/index.html. I have been using this recipe since 2008 I make no changes its awesome!! The Macaroni and Cheese I got on allrecipies.com http://allrecipes.com/recipe/chucks-favorite-mac-and-cheese. I also got the bread pudding recipe from allrecipies.com http://allrecipes.com/recipe/bread-pudding-ii.



 
Macaroni and Cheese
 
Ingredients:
1 8 ounce package of elbow macaroni
1 8 ounce package of sharp cheddar cheese
1 12 ounce container small curd cottage cheese
1/2 cup milk
1 8 ounce container of sour cream
1/4 cup grated Parmesan cheese
salt and pepper to taste
 
Directions:
1.Preheat oven to 350 degrees. Bring a large pot of water to a boil, add pasta, and cook until done:drain.
2.1n 9x13inch baking dish, stir together the macaroni and all the remaining ingredients.
3.Bake for about 30 minutes.
 
 
 
Broccolini
 
Ingredients:
Kosher Salt
4 bunches of broccolini (1 1/2 pounds)
1/4 cup good olive oil
1 1/2 tbsp balsamic vinegar
1/2 tsp Dijon mustard
1 tsp minced garlic
1/2 tsp freshly ground black pepper
1 lemon
 
Directions:
In a large pot, bring 8 cups of water and 2 tbsp of salt to a boil. Remove and discard the bottom third of the broccolini stems. If some of the stems are very thick, cut them in half lengthwise.
 
While the water is boiling, in a small bowl, whisk together the olive oil,balsamic vinegar,mustard,garlic,1 1/2 tsp salt, and the pepper. When the water comes to a full boil, add the broccolini, return to a boil, and cook over high heat for 2 minutes, until the stalks are just tender. Drain well and place in a large bowl. Pour enough dressing over the broccolini to moisten and toss well. Splash with a generous squeeze of fresh lemon juice, sprinkle with salt, and serve warm or hot.
 
 
 
 
Bread Pudding
 
Ingredients:
8 slices of cinnamon swirl bread
2 tbsp butter,melted
1/2 cup of raisins (optional)
4 eggs,beaten
1/4 cup brown sugar
2 cups milk
3/4 cup white sugar
1 tsp ground cinnamon
1 tsp vanilla extract
 
Directions:
1.Preheat oven to 350 degrees
2. Bread bread into small pieces into a 8 inch square baking dish ( I didn't use that I used a small rectangular baking dish) 
3.Drizzle melted butter over the bread.If desired sprinkle with the raisins.
4.In a medium mixing bowl, combine eggs, milk,sugars,cinnamon and vanilla. Beat until well mixed. Pour over bread, and lightly push down with a fork until the bread is covered and soaking up the egg mixture.
4.Bake in the preheated oven for 40 minutes, or until the top springs back when lightly tapped.
